I prefer to buy a whole cut of whatever it is that I want, so a strip loin for example, will run you between $60 and $100, depending on quality and size.. Take it home, clean it. and cut into any sized steak you want. Put the portions into a vacuum sealer, and you are good to go.
The alternative is to buy a 1/4 or half cow, and tell the butcher how you want it cut. They can generally vac-pac or wrap in butcher paper for you. But at least you know what you are getting. All too often the frozen Boxed meats are like those cowboy steaks that are marinated and tenderized with chemicals.
