If it wasn't true you wouldn't be so offended. I did spend a number of years as a server and more in my younger years, have also owned a restaurant, toying with the idea of another and in addition to other things currently liquidate defunct restaurants and/or buy and sell their equipment so sure I'll defend them all day.
