How was Zimmerman to know that a couple of punches, or head bashes into the concrete wasn't going to escalate into the use of a deadly weapon?

I'm sorry I have a concealed carry permit, there are areas of town I refuse to go to without a firearm, if someone physically harms me in one of those areas of town you can bet your ass I'm going to shoot them. I am not however, going to lay there and ask them if they have a weapon or if they're just going to beat the crap outta me.
