Humans are evolved primates. One certainty about evolution is that its impossible to predict what species of animal might replace humans. All animals are adapted to their environment. Environmental change is what almost always drives adaptation (such as walking upright). A likely guess would be that eventually be another primate. What separates humans from apes are a few massive leaps in brain development.
