We have hundreds of customers running both Microsoft Remote Desktop and Citrix XenApp in our HyperV clusters. No need to get a dedicated, just make sure the host dont overcomit the hardware and you get a solid I/O to the SAN.
Ask them for a Demo account and run a Disk performance Tool.
If you get less then 200MBs read/write, then you need to find another host.
Unless they are doing anything cpu-heavy (encoding/compiling) you will have no problems runng 10-15 people on a 4 core Virtual server, with 8-12Gig of ram
