Gob = mouth, e.g. "Shut ya gob" meaning "shut your mouth".
Shite = shit, just a slightly more polite way of saying it.
Therefore gobshite = someone who talks a load of shit.
We used to have sweets called "gobstoppers", they were just lollipops really but they stopped you from talking while you were sucking them hence the name.
