It is a matter of personal preference. You can invest your time writing a good AI prompt, proofreading it, and then editing it to make it more human-like, or you (as a website owner) can write your own titles and descriptions, for instance. Or you can pay a writer who has seen it all, and you don't have to worry about it and have more time for other stuff. I think it all depends on your lifestyle, income, spare time, etc.
We usually care more about what Google loves or hates and forget about our website's visitors. I think they are more important than Google in a way because they can always come back, while Google can fuck you up with the next core update. Ofc, basic SEO principles should always be applied.
