Changing of a will requires signature of the person who's will it belongs too along with the lawyer. He can write anything but when the original will is produced - copies are given to the owner or family to put in a safe place. If there was any additions they need to have signatures or a letter attached notarized with lawyer and the will's owners signature on it.
So no - its not a photoshop kinda thing. You're also forgetting if there is surviving family - they can take it to court as well and challenge the will
