What's the best way to convert videos in Final Cut Pro

My camera shoots video at 1440x1080 RAW to video cassette
I use QuickTime conversion to convert to mp4 1280x720
Which is better the best codec HDV or Prores 422 codec?
kbps 2000,3000?
Is this the best way to get the best quality out of the video?
